1 large green pepper
1 large red pepper
1 1/2 lb tender beef
(top sirloin)
1 1/2 c beef stock
Salt and pepper
3 Tbsp Oil
2 Tbsp Cornstarch
2 tbsp. Soy sauce
1/4 c cold water
1 tsp. Shredded ginger
or 1/2 tsp ginger powder
1 clove crushed garlic (opt)

Cut beef into 1/8 inch think slivers. Cut each bell pepper diagonally into strips. Mix cornstarch and soy sauce in 1/4 cup cold water and set aside. Place oil, salt, pepper, ginger and garlic in hot skillet, and beef and sauté 3 minutes. Add bell peppers mix well. Add all ingredients except cornstarch mixture; mix thoroughly, cover and cook 6 minutes. Then add cornstarch mixture and keep stirring until juice thickens to a smooth gravy. Serve over steamed rice.
