2 T butter or margarine
1/2 C chopped onion
1/4 C chopped celery
1/4 C chopped carrots
1 1/2 C sliced mushrooms
1/4 C flour
1/2 tsp. salt
1/4 tsp. white pepper
2 C beef, chicken or vegetable broth
1 C half & half
1 C cooked wild rice
Fresh herbs

Directions:
Directions:
In 3-quart heavy saucepan, melt butter over medium heat. Add onion, celery and carrot. Cook for three minutes. Reduce heat; add mushrooms and cook three minutes longer. Add flour, pepper and 1/2 teaspoon salt. Cook about three minutes or until the mixture begins to turn golden. Add stock and light cream; cook and stir until thick, smooth and bubbly. Add wild rice and fresh herbs. Heat through. Do not scald.
