1 lb. rigatoni, penne or other
homemade tomato sauce
1/2 lb. part skim ricotta
2 T. chopped fresh basil
1/4 c. grated parmesan
or pecorino cheese

Directions:
Directions:
Cook the pasta to al dente. Cook the tomato sauce. Mix a little tomato sauce with the ricotta in a bowl, then coat the macaroni. Add the rest of the tomato sauce and basil. Serve with grated cheese.

For my sister Diane who loves ricotta in her pasta. If she sees an unfinished container in my fridge, she'll be sure to take it home.
