6 medium sweet potatoes, scrubbed well

1/2 cup water
3/4 cup firmly packed light brown sugar
4 T (1/2 stick) unsalted butter
1/4 cup honey
juice of 1 orange
1/2 cup chopped walnuts (optional)

Directions:
Directions:
Preheat oven to 375. Butter a 13x9x2 inch baking dish. In a large pot of boiling salted water, cook the sweet potatoes over medium-high heat until tender, about 35 minutes. Drain and then peel. Cut into thick slices or quarters, and place in prepared baking dish.

In a medium saucepan combine water, sugar, butter, honey and orange juice. Bring to a boil, stirring, and cook over medium-low heat until mixture thickens, about 5 minutes. Pour over potatoes. Top with nuts. Bake 35 minutes. Let stand 5 minutes before serving.
