Approximately 2-Pounds Squash
1 tlbs corn or vegetable oil
3 medium yellow onions, thinly sliced
1/2 tsp oregano (optional)
1/2 cup vegetable broth or water
1/2 tsp salt

Directions:
Directions:
Wash the squash and cut into 2-inch pieces. heat the oil in a 2 quart saucepan. Add the onions and saute until transparent. Add the squash and oregano, saute for another 2 or 3 minutes. Add the broth or water and salt. reduce heat, cover and cook for 25-minutes.
