3 Large, very ripe tomatoes (about 2 lbs) cored & diced small
1/2 C tomato juice
1 small jalapeņo or other chili, stemmed, seeded, & minced
1 med. Red onion, diced small
1 med. Garlic clove, minced
1/2 C chopped fresh cilantro
1/2 C lime juice (about 4 limes)
Salt to taste

Directions:

Mix all ingredients, plus salt to taste, in a medium bowl.
Cover & refrigerate to blend flavor. Serve after at
least 1 hour, up to 5 days.

Lovely, simple, tasty fresh salsa.
Quality tomatoes mean everything- mealy beefsteak
tomatoes won't cut it.
