1 c. sugar 1/2 c. (1 stick) butter or margarine 2 eggs, unbeaten 1 1/2 c. mashed bananas (about 3-4) 1 tbsp lemon juice 2 c. flour 3 tsp. baking powder 1/2 tsp. salt 1 c. chopped nuts (optional)
Cream sugar and butter. Add eggs, one at a time, beating well after each addition. Stir in bananas and lemon juice. Sift flour with baking powder and salt; add and mix quickly. Stir in nuts. Bake in greased 9x5x3 loaf pan at 350º about 1 hour. Cool on rack.
