12 ounces fine noodles, cooked and drained
1/4 cup butter
1/4 cup flour
1/2 tsp salt
1/4 tsp pepper
1 cup chicken broth
1 cup sour cream (reduced fat works)
2 T cooking sherry
2 cups cooked, diced chicken
1 8-ounce can mushrooms
parmesan cheese

Directions:

In microwave-safe casserole dish, melt butter. Add flour and stir. Cook for 1 - 2 minutes until smooth, stirring once. Stir in warm chicken broth. Cook for 3 minutes, until thickened, stirring once. Add sour cream, sherry, chicken, mushrooms and noodles. Stir well to coat. Sprinkle top with parmesan cheese. Cook in microwave for 10 minutes. Let set for 2 minutes before serving.
