1 medium yellow bell pepper
1 medium red bell pepper
2 ounces of goat cheese (chevre)
1/2 cup shredded Monterey Jack Cheese
2 T snipped fresh chives
2 T snipped fresh basil

Directions:
Directions:
Cut bell peppers in half lengthwise, discarding the stem ends, seeds and membranes. Combine the peppers with a small amount of water in a saucepan and bring to a boil. Boil for 2 minutes. Drain on paper towels, cut side down.

Combine goat cheese, Monterey Jack cheese, chives and basil in a bowl and mix well. Spoon about 2 T of cheese mixture into each pepper section. Place on cookie sheet and broil for about 2 - 3 minutes until cheese is bubbling and peppers are slightly charred. To serve, cut each half into 2 wedges. Serve warm.

You can take the peppers and wrap them in a foil packet and put on the grill and grill for 5 to 6 minutes until the cheese is melted and peppers are tender crisp.
