4 C. Potatoes, pared-thinly sliced 1/2 tsp. Salt
1 sml. Onion chopped or sliced (opt.) Dash Pepper
1/2 Green pepper chopped 4 Pork Chops
or sliced (opt.) 2 T. Oil

Directions:
Directions:
Preheat oven to 375. Place potatoes in greased 2 quart baking dish. Sprinkle with onions, peppers, salt and pepper. Brown, both sides, pork chops in oil, place on top of potatoes, onions, and peppers.
Bake for 1 1/4 hours or until potatoes are tender.

I came across this recipe in one of my cookbooks I purchased from a church in Henryetta. The original recipe does not include green peppers, but it adds more flavor. I would not add onions or peppers to half of it due because my middle child, Josh, dislikes onion and green peppers. This is one of Big Danny's favorites.
