4 oz. boneless, skinless chicken breast, cut into strips
2 T. chopped onion
1 small clove garlic, minced
1 c. steamed broccoli
1 T plus 1 1/2 tsp crunchy peanut butter
1 T lemon juice
1 T soy sauce

Directions:
Directions:
Saute chicken strips, onion & garlic over medium heat until chicken is white and onion soft - about 5 minutes. Add broccoli and heat through. In a small bowl, make a smooth paste of peanut butter, lemon juice and soy sauce. Toss with chicken to coat. Stir until heated
