1 1/2 lbs. stew meat
1 potato, cubed
1 cup frozen mixed vegetables
2 - 141/2 oz. cans Cajun-Style Stewed tomatoes
1 onion chopped
1/4 tsp. minced garlic (optional)
salt and pepper to taste

Directions:
Directions:
Trim meat into 1-inch pieces. Place in crock pot, then add potato, mixed vegetables, onion, garlic and stewed tomatoes. Cook on High setting 6 to 8 hours, adding water if needed, season with salt and pepper after cooking.
