Ingredients:  
1 or more Large Zucchini (actually the larger the better)
olive oil
pizza sauce
Tuscan herbs (or blend of bay leaves, basil, rosemary, thyme and marjoram)
shredded cheese (mozzarella, mexican, pizza, etc)

Directions:
Directions:
Slice zucchini in 1/8 to 1/4 inch thick slices (leave skin on)
brush each side w/olive oil
lay on a large flat stone or cookie sheet/broiler pan.
place a spoonful of pizza sauce on each zucchini slice and spread evenly over top of slice.
sprinkle heavily w/Tuscan seasonings
top w/shredded cheese.
Place under broiler until cheese is melted then remove.

Finish cooking on grill until zucchini is softened...
