1 onion and 6 medium potatoes, diced
7 eggs
dab of milk

Directions:
Directions:
Pour a large amount of olive oil into a non stick frying pan on medium heat. Add diced onions and potatoes. (1 onion and 6 medium potatoes) Stir here and there. Let brown & soften.
Add (choice) of eggplant, spinach, swiss chard, etc. Stir.
Mix 7 eggs and dab of milk (can add tsp baking powder for fluffier product)
Add potato mixture into egg mix, stir.
Add small amount of oil to pan if necessary and return mix to frying pan. Form into a big patty, pushing in the sides and flattening the top. Low-med heat.
With spatula, slide under tortilla a couple times so it doesn't stick then form the patty again. When browned on bottom, take a large plate and place it on the tortilla (bottom facing up). Take frying pan with one hand holding plate with other and flip the tortilla onto plate. Add more oil if needed then slide back into pan to brown the other side. Same procedure then flip onto plate to serve when browned. Should hold together.
Cut like a pie.
