1 whole chicken (weight is depending on servings needed)
1 large lemon, cut into half
1 spring of rosemary
salt and pepper
olive oil or butter, whichever you prefer

Directions:
Directions:
Preheat your oven to 350. The butter or olive oil on the skin of the chicken until it is completely coated. Take a knife and gently seperate the breast meat from the skin. Slide the lemon halves under the skin, peel side up. This way the juice from the lemon will coat the breast. Season the skin with salt and pepper. Put the rosemary inside the chicken. Cover and place in the oven for 30-45 minutes. Remove the cover and continue to roast until juices run clear, basting every 15-20 minutes depending on the size of the bird.
