1 1/2 lb. boneless chicken breasts (or thighs), cubed
1 chicken bullion cube
2 cups water
1 teaspoon salt, 1 teaspoon pepper
2 tablespoons olive oil
1 1/2 cups mushrooms, chopped
1 yellow onion, chopped
4 cups fresh spinach, chopped
1/2 cup scallions, chopped
3 tablespoons parsley
1 bay leaf
1 clove garlic, chopped
1 teaspoon oregano
1 teaspoon basil
1 teaspoon thyme
6 ounces egg noodles

In electric skillet or big stove pan, boil water and add chicken, onions, scallions, mushrooms and olive oil. Stir occasionally for 10 minutes until chicken is thoroughly cooked and onions are transparent. Add spinach and spices, stirring occasionally for 10 minutes. Add noodles, and additional water (or white wine) to cover all ingredients. Cover and simmer for 45 minutes. Serve hot (when the water has evaporated), with a dollop of sour cream.
