1 1/2 c margarine
8 oz cream cheese
3 c sugar
1/3 c lemon juice
1 T grated lemon peel
6 large eggs
3 c flour
2 t baking powder
1/4 t salt

Glaze:
2 c powdered sugar
1 T lemon juice
1 T milk
bit of lemon peel



Directions:
Directions:
Cream softened margarine and cream cheese with sugar. Add the rest. Bake 350 in greased muffin tins for 25 minutes. Refrigerate unused batter up to 4 days.

For glaze, mix ingredients with fork until smooth, spread a small amount on top of warm muffins.

I can't even tell you how awesome these are! Katy's Inn isn't in business any longer, but this recipe is DEFINITELY worth a try.
