1 10-oz. pkg. frozen chopped spinach
1/2 pound pasta (ziti, penne or other tubular kind)
4 tbsp. butter, divided
1 tsp. salt
1 cup ricotta
1/2 cup parmesan
pepper to taste

Directions:
Directions:
Thaw the spinach, drain and squeeze out liquid. Cook pasta and drain. Melt 2 tbsp. of the butter in a large skillet or sauce pan. Add spinach and saute for 3 minutes. Sprinkle with salt. Add pasta to spinach along with all the remaining ingredients. Toss gently over low heat until thoroughly combined and warmed. It may be necessary to add a few tablespoons of milk at this point to "loosen" the mixture up a little and make the cheese coating a little creamier.
