French Onion Soup Recipe

1 lb. onions, chopped
1 3/4 pints beef stock
1/4 pint red wine
salt & pepper
sliced french bread
mozzarella cheese, grated

Directions:
Directions:
Cook onions until soft and golden. Pour in stock and bring to a boil, reduce heat and simmer for 25 minutes. Add wine and seasoning, stir well and heat the soup for a further few minutes.

Put a slice of French bread into each heatproof soup bowl and pour soup over. When bread rises to the surface, sprinkle the top with cheese, then immediately put under a hot grill until golden. Serve immediately.
