2 egg whites
1/2 cup sugar
1/2 tsp. mint extract
6 oz. mini chocolate chips

Directions:
Directions:
In a large bowl, beat egg whites until foamy, gradually add sugar a tablespoon at a time, beating well after each addition until whites hold stiff with glossy peaks. Add mint extract, beat one more minute. Fold in chocolate chips.

Drop by teaspoonfuls onto well-greased baking sheets about 1" apart. Bake at 200 for one hour or until outside is dry and set - they should not brown. Let cool on sheets for 5 minutes before removing to wire rack. Store airtight.
