¼ cup sliced almonds
4 slices bacon
2 heads butter lettuce, or 1 large head romaine
Diced or sliced red onion, to taste
1 can mandarin oranges, drained
½ pound fresh mushrooms, sliced
Extra blue cheese crumbles, to taste
Blue Cheese Dressing, recipe below

Cook bacon until crisp, drain and crumble. Tear lettuce into bite-sized pieces and place in salad bowl. Add oranges, mushrooms, bacon, onion, cheese and almonds.
Toss with dressing when ready to serve.

Blue Cheese Dressing:

6 Tbl. Salad oil
3 Tbl. White wine vinegar
3 Tbl. Crumbled blue cheese
¼ tsp. each salt and dry mustard
Pepper to taste.

Whisk all ingredients together, or put in jar and shake. Chill until serving.
