Bran Muffins Recipe

1/2 cup whole-wheat flour
1/2 cup white flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. ground cinnamon
2 cups Trader Joe's High Fiber Cereal
1 1/3 cups reduced fat milk
1/3 cup brown sugar
1 egg, slightly beaten
1/2 cup applesauce

Preheat oven to 400 degrees.

Mix cereal, milk, and sugar in a medium bowl, let stand 5 minutes. Stir in egg and applesauce/

In a large mixing bowl, combine flours, baking powder, baking soda and cinnamon.

Add egg mixture to flour mixture; stir just until moistened. (batter will be lumpy)

Spoon batter into muffin pan sprayed with cooking spray, filling each cup 2/3 full. Bake 20 minutes or until golden brown. Makes 12 muffins.
