3 eggs
1/2 cup oil
2 cups standard plain flour
1 cup sugar
3 tp. baking soda
1/2 tp. cinnamon
3 cups carrots. grated
1/2 cup walnuts, chopped
1tp. grated orange rind
3/4 cup crushed pineapple
Cream Cheese Icing

Directions:
Directions:
Beat eggs until thick. Stir flour, sugar, baking soda and cinnamon into the egg mixture and combine. Fold in carrots, walnuts, orange rind and pineaple. Grease and line the base of a 23 cm ring tin. Spoon mixture into tin. Bake at 180 C for 40 minutes or until cake springs back when lightly touched. Leave in tin for 10 minutes before turning out onto a wire rack. When cold ice with Cream Cheese if wished.
