Ingredients:
Pork lion cut into large chunks
1 8 oz. can tomato paste
1 large can tomato sauce
water
oregano, bay leaf, salt & pepper

Directions:
Directions:
Brown pork chunks on all sides. Remove from pan to the side. Add tomato paste and scrape up any brownings. This adds flavor. Add about 1 can water (I use the small tomato paste can for this). Pour in tomato sauce & 2 large cans of water. Add spices to your liking. Bring to a boil. Reduce heat, add pork back into sauce. Simmer 3 to 4 hours. Stir Occasionally. When almost done, cook rigatoni or your favorite pasta per the package directions. Drain pasta and pour noodles into a serving dish. Cover rigatoni with pork and sauce. Each person gets approx. 1 hunk of pork per person. The pork is very tender to the point of falling apart.

As you know Colin and I enjoy watching the Food Channel. I wrote down this recipe about 5 years ago from one of the shows when they were taping from a famous old Italian restaurant.
