6 T. flour
6 T. margarine
3 c. milk
3/4-1 tsp. salt
dash of pepper
2 c. sharp cheddar cheese, grated
1 egg
1 T. dry mustard
1/4 tsp. baking soda
1 T. yellow mustard, or to taste
2 c. cooked chicken, cut in small pieces
1 sm. can of sliced mushrooms
3 or 4 hard boiled eggs, cut in half lenth-wise

Directions:
Directions:
Make the white sauce in a double boiler with the flour, margarine, milk, salt and pepper. Mix in cheddar cheese until melted. Add the egg to the sauce and mix in well. Stir in the mustards and baking soda and combine well. Add the chicken and mushrooms and heat through. Place the eggs in gently, spooning sauce over them so they heat through. To serve, put one of the eggs over a piece of toast or baking powder biscuits and spoon sauce over it. Enjoy!
