1 lb. bacon, fried crisp and crumbled (opt)
1/4 c. sliced almonds
1 T. + 1 t. sugar
1/4 head iceberg lettuce
1/4 head romaine lettuce
1 c. chopped celery
2 green onions, thinkly sliced
1 (11 oz) can mandarine orange segments, drained

Dressing:

1/2 t. salt
Dash pepper
2 T. sugar
2 T. vinegar
1/4 c. salad oil
Dash red pepper sauce
1 t. snipped parsley

Directions:

Cook almonds nad sugar over low heat, stirring constantly, until sugar is melted and almonds are coated. Cool and break apart.

Tear lettuce and romaine into bite-sized pieces (about 4 cupst). Add celery and onion. If preparing ahead, refrigerate in a large Ziploc bag. When ready to serve, add oranges, bacon bits and
dressing to lettuce mixture. Toss until well coated. Add almonds and toss lightly.

Takes a little time, but well worth it. I do everything ahead, so it can be thrown together at the last minute. Always a hit!
