Baked Brie in Bread Recipe

2 8-oz wheels of Brie
1 lg. round sourdough loaf
1/4 c. olive oil
1T. rosemary or 3 T.fresh rosemary
1 T. dried thyme or 3 T. fresh thyme

Directions:
Directions:
Preheat oven to 325 degrees. Place one of the wheels of Brie on top of the loaf and, using it as a guide, cut around the bread with a serrated knife. Remove the circle of crust and use your fingers to pull ou enough bread so that the Brie fits inside with 1/2 inch of headroom above it.
Heat oil in small saucepan and add herbs. cook over low heat for 5 min. pour half the oil over the wheel of Brie in the bread, then place the second wheel on top of the first. Use your hands to gently press down into the bread. Drizzle rest of oil on top of the Brie and bread.
Place on baking sheet that has been lined with foil. Gather the edges of the foil up and fold them around the bread to that only the cheese is exposed.
Bake for 35-40 min. or until a knife inserted in the cheese comes out hot.
Serve hot or at room temp. with extra bread or crackers.
