1 lb. potatos peeled and diced
1 green bell pepper diced
1 red bell pepper diced
1 medium onion diced
1/4 c. olive oil
salt and pepper
1 lb. Italian pork sausage

Directions:
Directions:
Preheat oven to 450. Spread the vegetables in a roasting pan. Don't crowd or they won't brown evenly. Drizzle with oil and salt and pepper.
Roast, stirring occasionally for 45 min.
Grill the sausage until almost cooked through. Then cut into chunks and put in the oven with the veggies, including any pork juice that's running off the cutting board. Stir and finish cooking until sausage is done.
