2 c. whole natural almonds
1 c. sugar
4 egg whites at room temperature
pinch of salt
1/2 tsp. vanilla extract

Directions:
Directions:
Preheat oven to 300. Line a baking sheet with parchment paper or foil and spray with nonstick spray. Pulse almonds and sugar in a food processor until finely ground. With a mixer on medium speed, beat egg whites until frothy. Add salt, and increase speed to high until stiff. Gently fold in the almond mix and vanilla.
Spoon dabs of batter onto the baking sheet 1 1/2" apart. Bake until lightly golden, about 30 min. Cool for 1 min. before removing cookies and continue to cool.
