6 1/2 T. corn starch
1 1/2 c. sugar
3/4 c. lemon juice
4 egg yolks
2 1/4 c. boiling water
2 T. butter
Meringue:
4 egg whites
1/4 tsp. cream of tartar
1/2 c. sugar
3/4 tsp. vanilla

Directions:
Directions:
Filling: Combine corn starch, sugar and lemon juice. Beat the egg yolks and add to the mixture. Gradually add boiling water while stirring. Heat to a boiling and boil gently for 4 minutes, stirring constantly. Take off burner and add butter. Pour it in the pie shell immediately.
Meringue: Beat the egg whites and cream of tartar until foamy. Beat in sugar 1 T. at a time. Continue beating until stiff and glossy. Beat in vanilla. Heap the meringue onto the hot pie filling and bake at 400 for 10 minutes or until lightly browned.
