Salad:
3/4 head of endive (Nana washed and cut into pieces.)
3-5 green onions, cut into small pieces
6-8 slices of bacon, fried or microwaved til crisp
Dressing or White Sauce:
2 eggs, beaten
2-3 T. vinegar, or to taste
2-3 T. sugar, or to taste
2-3 T. flour
2-3 T. butter
1 c. milk
1/4 tsp. salt
dash of pepper

Directions:
Directions:
Cook washed endive until tender and or microwave. Drain and add onions and crisp, crumbled bacon. Make the white sauce; in a saucepan, melt butter and wisk in flour. Let flour cook for about 1 minute or until raw flour taste cooked out. Wisk in the milk and season with the salt and pepper. Wisk in the eggs, vinegar, and sugar. Cook until thickened like mayonnaise, stirring continuously. Pour hot mixture over endive and combine well. Enjoy!
