8 medium baking potatoes
1/2 c. butter
2-1/2 tsp. salt
1/4 tsp. pepper
2/3 c. warm milk
1-1/2 c. shredded Cheddar cheese
1 c. (1/2 pint) heavy cream, whipped
3/4 brick cream cheese
1 small onion, minced

Directions:
Directions:
Peel and boil potatoes until tender. Drain and beat in a large bowl with mixer until fluffy, adding butter seasonings, milk, cream cheese and onion. Turn into a 9x13 casserole. Fold Cheddar cheese into whipped cream and spread over potatoes. Bake at 350 degrees about 40 min until golden brown. Can be made ahead and topping added just before baking.
