1 9" pie crust
4 c. fresh blueberries divided
5 T. water, divided
2 T. lime juice
dash of ground ginger
3/4 c. sugar
3 T. cornstarch
ice cream or whipped cream

Directions:
Directions:
Bake the pie crust to a golden brown according to directions for making an unfilled crust. Set aside to cool. Rinse blueberries. Place 1 1/2 c berries, 2 T water, lime juice, ginger and sugar in a medium saucepan, bring to a boil and cook stirring until clear and thick enough to coat the back of a spoon, 1-2 min. Remove from heat, stir in remaining 2 1/2 c berries, spoon into cooled crust and refrigerate at least 1 hour. Serve cold with ice crearm or whipped cream.
