12 cups loosely packed spinach(2 bunches)
6 tbsp. butter, divided
1/2 cup diced green onions or white onions
1 clove garlic minced
6 cups chicken broth, salt and pepper plain croutons, grated Jarisberg cheese.

Directions:
Directions:
Blanch spinach by dropping in boiling water. Let water come to a boil and simmer leaves for about 2 min. Remove leaves and cool inder running water, press out excess water and roughly slice leaves. Melt 2 tbsp.butter in a large pan, saute onions over low heat until tender, add garlic and saute 1 min. add remaining butter, spinach and turn up heat saute fro 5 min.or till done and butter is absorbed add broth bring to a boil and simmer. Cook 15 min. season with salt and pepper. Before serving garnish with croutons and sprinkle with cheese .
