2 medium summer squash, sliced
2 medium zucchini, sliced
1 medium onion, sliced into rings
1 firm tomato, sliced
10 sliced fresh mushrooms
2 T. olive oil
1/2 c. grated Parmesan cheese
! T. Italian seasoning
salt and pepper to taste

Directions:
Directions:
Combine vegetables and toss with olive oil, Italian seasoning, salt and pepper.
Layer 1/3 mixture in a greased casserole and sprinkle with Parmesan cheese.
Layer second and third parts the same way.
Cover with aluminum foil and bake at 375 for 30-45 min.
