2 Large or 4 Small Baked Potaoes
3 Tbsp Lite Butter
2 Tbsp Flour
1 1/2 Cups Skim Milk
1 1/2 Cups Half -n- Half
1 1/2 Cups Cheese (I use Monterey Cheddar)
Salt and Pepper to taste

Directions:
Directions:
Melt butter and add flour then add skim milk 1/2 cup at a time stirring after each addition. Add the half -n- half and stir. Peel potatoes and cube them and add them to the milk mixture. Add the salt and pepper to taste. Add the cheese and let the mixture simmer on low for about 20 minutes stirring occasionally. This soup is delicious served in a bread bowl. Yummy!!
