1 lb. baby carrots 1 t. butter 1/4 c. orange marmalade 1 tsp. ground ginger 1/8 tsp. ground nutmeg 1 T. chopped parsley salt and pepper
In skillet on high, boil 3/4 c. water with carrots. Reduce heat and cook until tender. Drain. Return the carrots to the pan on hi and add butter, marmalade, ginger and nutmeg 5-6 min. Sprinkle with salt and pepper and top with parsley.
