1/4 c. flour
4 veal shanks about 1 1/2" thick
2 T. butter
1 T. olive oil
salt and pepper
1 small onion finely chopped
1/2 c. dry white wine
1 c. peeled, seeded, and chopped fresh tomatoes or canned
1 c. beef broth
2 garlic cloves finely chopped
2 T. Italian parsley
1 tsp. lemon zest

Directions:
Directions:
Dredge the veal in flour. In a big pot, melt butter with oil on med hi. Add veal and sprinkle with salt and pepper. Cook until brown. Turn and sprinkle with salt and pepper on the other side and brown. Add onion and cook until tender.
Add wine and scrape the bottom of the pan lifting any bits. Add tomatos and broth and simmer. Keep partially covered and keep basting meat with the sauce. Cook for 1 1/2 hours or until meat is coming off the bone. During the last 5 min. chop garlic, parsley, and lemon zest and stir into the meat.

To my brother in law Jim. A true pork lover, but he loves his Osso Buco. I can always count on Jim to pick out a great red wine for this dish.
