Leg of lamb cleaned chicken broth lemon juice white wine thyme rosemary oregano olive oil salt pepper garlic cloves
Combine all the ingredients into a marinade and let it rest. Poke holes with a knife into the lamb and coat the lamb with the marinade. With your finger push the garlic cloves and herbs into the holes. Refrigerate over night. Discard the marinade and baste with more wine. Bake 350º according to weight, probably 2 hours.
It isn't Easter without this lamb dish. Mom would get it going in the morning, put it in the oven and we'd go to church. When we'd walk in the door, the heavenly smell was so welcoming. Buona Pasqua!
