6 Boneless chicken breasts salted 3/4 c. chopped onion 3 garlic cloves 1 T. oil 1 1/4 c. chicken broth 1 c. medium salsa 1 c. rice 1 ripe avocado 1 can diced tomatos 1/2 c. monterey jack cheese shredded bunch cilantro
I a pot, add oil, onion and garlic, cook until tender. Add broth and salsa. Boil, stir in rice, arrange breasts on top, cover and simmer 30 min. Remove from heat and let stand, add diced tomatos and cheese, keep covered until they meld. 5 min. Serve over rice with sliced avocado and cilantro.
