3/4 c margarine
1 1/2 c sugar
3 eggs
2 1/4 c flour
1/4 tsp salt
1/4 tsp baking soda
3/4 c buttermilk (I used powdered buttermilk)
1/4 c lemon juice
Grated rind of 1 lemon
3/4 c pecans or walnuts


GLAZE

Juice of 1 lemon
1/2 c sugar

Directions:
Directions:
Cream margarine, sugar and beat in eggs. Sift flour, salt, baking soda and add to batter, alternately, with buttermilk and lemon juice. Mix well. Stir in lemon rind and nuts.

Bake up to 1 hour and 15 minutes at 325 in a glass pan or 350 in a 9x3x5" loaf pan that is greased and floured. Check occasionally to see if a toothpick comes out clean. Cool completely.

For the glaze, combine lemon juice and sugar. Let stand to allow sugar to dissolve. Pierce top of loaf in a number of places, and spoon over glaze. Allow to cool to room temperature before slicing.
