1 3 lb. chicken sectioned
1/2 c. olive oil
1 small peeled tomato
pinch saffron
3/4 c. peas
5 c. water
2 c. rice
1 clove garlic
1 c. string beans
12 shrimp, clams and mussels
1 tsp. paprika
salt and pepper
chorizos (spanish sausage)

Directions:
Directions:
Boil water, wash, dry and salt the chicken. Fry the chicken in hot oil, add tomato, garlic, string beans, and peas. Add paprika and water bring to a boil and add saffron, salt, seafood and chorizo. Add rice and cook on a low simmer for 30 min.

My mother cooked all kinds of ethnic foods. We even had theme nights. My dad was born in Puerto Rico with a Spanish heritage. So, you'll see a lot of Puerto Rican and Spanish recipes here too. Thanks Mom for teaching me.
