4 lbs. whole squid cleaned and cut into rings, keep the tentacles
flour or corn starch
frying oil
salt and pepper
garlic powder
lemons
parsley for presentation

Directions:
Directions:
Make sure the squid is well drained of water so it doesn't splatter in the hot oil.
Heat a skillet 3 inches deep with oil until dancing.
Combine the flour with salt, pepper and garlic powder. Dredge the calamare in the flour mixture.
Deep fry until golden brown on all sides. Sprinkle with salt to taste, squirt lemon juice all over and serve on a platter lined with lemon wedges and parsley. Eat immediately while hot.

Mom was my first cooking teacher. I grew up at mom's side in the kitchen watching and learning. I learned our family recipes, how to set a table and one important skill which I still do to this day... Clean fresh squid! Fresh and whole is always better than cut, cleaned and frozen. The same goes for shrimp. I love you mom.
