2 C fresh corn kernels (about 4-6 ears of corn)*
2 eggs, separated
4 T all-purpose flour
1 tsp salt
cayenne pepper
Corn oil
Clover or orange blossom honey

Directions:
Directions:
*Substitute frozen corn if out of season.
With a sharp knife, scrape kernels off of cobs. Pour into large bowl. Lightly beat the egg yolks and add to the bowl of kernels along with flour, salt and cayenne pepper. Mix lightly. Beat the egg whites until almost stiff and fold into the corn mixture.
Heat corn oil to 360 in a deep-fat fryer or sauce pan. With a soup spoon, drop batter into hot oil. Deep fry 4 or 5 fritters at a time, turning occasionally, for 3 to 4 minutes or until golden brown. Drain on paper towels. Drizzle with honey and serve immediately. Makes 12 to 16 fritters.
