Ingredients:  
2 T. butter
6 leeks, white only, sliced
3 garlic cloves
3 celery stalks
1 white onion
6 peeled and sliced potatos
6 c. chicken broth
1/2 c. parsley
1 egg yolk beaten
salt and white pepper
dash nutmeg
2 c. half and half

Directions:
Directions:
Saute the leeks and onion in butter with garlic until soft. Add potatos, broth, parsley and celery. Simmer until soft. Blend in batches until smooth, return to the stove and add beaten egg yolk, seasonings and cream. Keep on low heat until creamy. Garnish with cayenne pepper.
