1 Thanksgiving turkey carcass- bring to a boil in 2 quarts of water and simmer for about 30 minutes to an hour. (You can substitute a small chicken for the turkey- simmer till it falls of the bone.)
1 cup lentils, rinsed
3 garlic cloves, minced
1 onion, chopped
2 celery stalks, chopped
1 can diced tomatoes
1 teaspoon turmeric
1 teaspoon cumin
1/2 teaspoon thyme
1/4 teaspoon dried red pepper flakes
Salt, to taste

Directions:
Directions:
Remove turkey or chicken from the bone. Strain the broth and add to large soup pot with the meat.
Add remaining ingredients and bring to a boil. Reduce heat and simmer til lentils are tender. Add more water or broth as needed.
