3 cloves minced garlic
1 small chopped onion
olive oil
3 c.chicken broth
1 head of fresh washed spinach leaves chopped fine
1 can of peeled diced tomatos with juice
1 frozen package of cheese tortellini
splash of white wine
salt and pepper

Directions:
Directions:
In a soup pot heat oil and saute garlic and onion on medium heat until soft. Add tomatos, broth, and tortellini, when the tortellini is cooked add the spinach last until lightly wilted. Add a splash of wine and season with salt and pepper. Serve individual bowls and drizzle olive oil on top of each. Serve with crushed black pepper.

This is so easy and everything cooks in one pot. The smell that this soup makes is so comforting and so Italian. I serve this as a meal and great on a chilly day. Serve with warm, crusty Italian bread, and some nice cheeses. Buon Appetito
