20 shrimp, peeled and cleaned
2 T. olive oil
1 T. Italian parsley (flat leaf)
1 tsp. garlic, minced
salt and pepper
2 oz. feta cheese, crumbeld
1 T. mint cut into ribbons

Dressing
1 c. olive oil
1/2 c. lime juice
salt and pepper

Directions:
Directions:
Season shrimp with oil, parsley, garlic, salt and pepper. Grill shrimp on fire or grill pan 2 min each side
Remove from heat and refrigerate 1 hour
Arrange shrimp on the plate and pour dressing on top and finish with feta and mint.

Dressing
Process on high the lime juice, oil and salt and pepper
