Single pie crust
Meat: pound crisp, crumbled bacon OR
pound thinly sliced baked honey ham, chopped into small pieces
1 cups of cheese (I use 1 cup shredded Swiss and cup shredded cheddar)
cup diced onion
2 teaspoons of flour (I use Wondra in the shaker)
Salt and pepper
Dash of ground ginger
1 cup whipping cream
2 large eggs

Prepare plain pastry as for a single crust pie.
You can use a frozen 9 inch deep dish pie shell or frozen pie crust fitted it into a large pie or quiche dish. Before baking, prick the entire pie shell (bottom and sides) with a fork and cover the edges with foil. Bake at 400 for 12 minutes. Set aside; reduce oven temperature to 325.
Alternate layers of cheese, onion and meat in pie shell.
Scramble eggs and add flour, salt, pepper and nutmeg and then whipping cream. Carefully pour over cheese and meat in pastry shell.
Bake uncovered, but with foil around edges, at 325 for 35-40 minutes. Bake until knife inserted comes out clean. Let stand 15 minutes before serving. Quiche can be frozen.
