2 c. Rotelle pasta (spirals)
1/2 c. chicken broth
3 T. lemon juice
2 tsp. olive oil
1 tsp. lemon zest
4 cooked chicken breasts shredded
1 tomato cut into wedges
1 yellow tomato cut into wedges
4 scallions thinly sliced
1/2 c. mint leaves
1/2 c. basil leaves
8 kalamata olives pitted and quartered
1/2 tsp salt

Directions:
Directions:
Cook the pasta to al dente. In a saucepan combine broth, lemon juice, oil and lemon zest to a boil. Add chicken, reduce to simmer until heated through. Remove from heat and keep warm. Transfer pasta to a large bowl. Add the chicken mixture and the remaining ingredients. Gently toss and serve.
